I wasn't sure about the name category of these flourless chocolate chip cookies. In my opinion, these cookies are gluten-free because there is no flour in them — however, they are not considered GF in all countries. In Australia, oats are not labeled as gluten-free. Either way, these are flourless chocolate chip cookies that are delicious and easy to make. Let's get one thing straight: natural oats contain no gluten whatsoever. The reason they aren't instantly labeled gluten-free is that in modern factories they are often contaminated, and can therefore contain gluten in a proportion that won't be healthy for people with gluten intolerance. There are a few brands of oats that are marked as gluten-free — go for those if you want to be 100% certain there's no gluten in this recipe.

Flourless chocolate chip cookies? why is this necessary?

This recipe challenges the traditional chocolate chip cookie and tries to recreate one that's good in texture and taste, as well as in nutritional values. A chocolate chip cookie has to be crispy on the outside and soft and chewy on the inside — and that's exactly the texture we're going for. flourless chocolate chip cookies Making gluten-free or flourless chocolate chip cookies without settling on texture and taste is not an easy task, but the oat flour we use performs great. We do use a higher amount of liquid in the recipe — when there's no wheat flour of any kind, oat flour absorbs more liquid, and it's essential for the cookie to be moist. The batter will be a bit runny. Another key to the success of these flourless chocolate chip cookies is really not overcooking them. Even if you think the cookie isn't ready and hasn't gotten the golden crust you were expecting, take it out. After the cookies cool down they tend to firm up, and leaving them in the oven longer will give them a grainy texture instead of soft and chewy — which is not what we want.

Questions & answers

Can I use regular rolled oats instead of gluten-free?
Yes, if you're not avoiding gluten, regular rolled oats work fine here — the gluten-free label just matters if you're baking for someone with an intolerance.
I don't have a stand mixer. Can I mix by hand?
You can, but the dough is sticky so it takes some elbow grease — a hand mixer works great too, just use the same paddle-style beaters if you have them.
Can I swap milk chocolate for dark chocolate?
Absolutely — Jaron actually calls this out in the recipe, dark chocolate works just as well as milk chocolate here.
Why can't I bake two trays at once?
The recipe is clear on this — stacking trays means uneven baking, so some cookies will be underdone while others overbake. Do one tray at a time and get consistent results.
Do I need a food processor to make the oat flour?
A food processor is what the recipe calls for — blend the oats for a few minutes until you get a smooth flour before mixing anything else.
