The Most Versatile Salad Out There...
This is a very basic green herbs salad recipe. There are countless variations you can play with, and the herbs go well with many different ingredients. This salad is very light and refreshing — it can accompany heavy dishes that need some lightness and/or some acidity next to them. The balance between the olive oil and the lemon juice is key, but you can also replace some of the lemon juice with rice or champagne vinegar, for example. In this recipe I've added some pine nuts, which I adore, but you can also use some grilled walnuts. I also love adding some feta cheese. And if you throw in some dried cranberries, raisins, or figs — this salad gets really festive!Method

Making The Salad· 10 Minutes
Chop herbs and place in a bowl. Add olive olive and lemon juice and mix well. Toast the pine nuts on a dry pan. Stir occasionally and don't let them burn (like I did to some of them in the picture...). Add pine nice, mix and serve immediately.

Can I swap pine nuts for something cheaper?
Sure — pine nuts get pricey fast. The recipe doesn't list alternatives, but since this is your call, just keep the quantity the same (3–4 tbsp) and toast whatever you use the same way: dry pan, stir often, watch it closely.
How do I keep the pine nuts from burning?
Stay at the pan — seriously, don't walk away. Stir them occasionally and pull them off the heat the moment they turn golden.
Can I make this ahead of time?
Not really. The recipe says serve immediately, and dressed fresh herbs wilt fast, so toss everything together right before you eat.
How much lemon juice does half a lemon give me?
Roughly 1–1.5 tbsp depending on the lemon. Squeeze it straight in and adjust to your taste.
Can I scale this up for a bigger crowd?
Easily — just multiply everything evenly. The herbs are measured by the cup so it's straightforward to double or triple the whole thing.
