The Most Versatile Salad Out There…

This is a very basic Green Herbs salad recipe. There are countless of variations you could play with and the herbs go well with many different ingredients.

This salad is very light and refreshing and can accompany heavy dishes that need some lightness and /or some acidity next to them. The balance between the olive oil and the lemon juice is key but you can also replace some of the lemon juice with rice or champagne vinegar for example.

In this recipe I’ve added some pine nuts which I adore but you can also use some grilled walnuts. In addition I also love adding some Feta Cheese. Furthermore, adding dried cranberries, raisins or figs will make this salad really festive!

10 Minutes

Making The Salad

Chop herbs and place in a bowl. Add olive olive and lemon juice and mix well.
Toast the pine nuts on a dry pan. Stir occasionally and don't let them burn (like I did to some of them in the picture...).
Add pine nice, mix and serve immediately.
